Shaved Brussel Sprout Salad
I love Brussel sprouts. Usually I roast them, but lately I've been making a delicious shaved Brussel sprout salad that my friend Maree made for Thanksgiving. It's not usual that my favorite dish at Thanksgiving is a salad!
- 1/8 cup lemon juice
- 1 T dijon mustard
- 1 t minced shallot
- 1 small clove of garlic, crushed or minced
- 1/4 cup olive oil
- salt and pepper
- 1 bunch of kale, center stem discarded and sliced thinly
- 1/2 pound of brussel sprouts, shredded or shaved
- 1/4 cup toasted walnuts
- 1/2 cup finely grated parmesan cheese
Make the vinaigrette. Mix together lemon juice, mustard, shallot, garlic and a pinch of salt and pepper. Slowly whisk in olive oil.
Toss the brussel sprouts and the kale together. Then toss it with the vinaigrette and the cheese. Garnish with walnuts.
This salad is great with roasted meats (like that Thanksgiving turkey) or really just about any winter dish!
